Quite e pretty são bem próximos no significado, algo do tipo menos que muito, mas mais do que pouco, um tanto.
Podemos dizer:

Anna lives quite near me, so we see each other pretty often. (A Anna mora bem perto de mim, então nos vemos com bastante frequência.)
Pretty é mais comum no inglês falado. Veja mais exemplos:

I’m pretty tired after work today. (Estou bem cansado depois do trabalho hoje.)

Quando usamos quite com adjetivo + substantivo, ele vem com a ou an. Veja exemplos:

Quite a/an + substantivo (sem adjetivo):

Rather é bem parecido a quite e pretty, mas o utilizamos para ideias mais negativas.

My laptop is rather slow these days, so even simple tasks take longer than they should. (Meu laptop está bastante lento ultimamente, então até tarefas simples levam mais tempo do que deveriam.)
The instructions were rather confusing, and several people had trouble understanding what to do. (As instruções eram bastante confusas, e várias pessoas tiveram dificuldade para entender o que fazer.)
The restaurant was rather noisy, which made it difficult to have a normal conversation. (O restaurante era bastante barulhento, o que dificultava ter uma conversa normal.)

Nas frases acima o uso de quite também é possível, mas retira um pouco da conotação negativa.
Usamos rather também para ideias positivas e nesse caso significam algo como surpreendentemente ou incrivelmente.

FAIRLY
Fairly é mais fraco do que quite, rather e pretty. Se dizemos que algo é fairly good, não é muito bom e poderia ser melhor.

Her English is fairly fluent, although she still makes a few mistakes with more advanced grammar. (O inglês dela é razoavelmente fluente, embora ela ainda cometa alguns erros com gramática mais avançada.)
The movie was fairly interesting, but it wasn’t exciting enough for me to watch it again. (O filme foi razoavelmente interessante, mas não foi empolgante o suficiente para eu assisti-lo novamente.)

EXTRA
Quite também significa completamente. Por exemplo:
‘Are you sure?’ (Tem certeza?)
‘Yes, quite sure.’ (Sim, completamente.)
